                             PROCESS  OF PREPARING POUNDED YAM:
Pounded yam occupies a very good position among the products. Yam is consumed by the Mahi people of Benin, regardless of the level of prosperity. Yam is consumed in various forms, the most popular of witch is pounded yam under the name “Agou”. Discover here a little bit, the process of preparing this dish. The yam tubers are peeled and cut into cylindrical slices or pieces. These pieces are then cooked in water, which generally takes between 20 to 25 minutes, depending on the variety. This is called boiled yam. The boiled yam pieces are placed one by one in a mortar and crushed using a pestle. The preparation is pounded and kneaded until a stretchable dough is obtained. This is called pounded yam. It is often served with peanut sauce or, if desired, with the crushed mixture of basil leaves called in Mahi: “Kiyoyo”.
